This offering is a first for Kaffae, but a first in three ways.

First, it is a blend of coffees from three of Mexico's prominent coffee producing regions: Veracruz, Oaxaca, and Chiapas. Each region grows delicious coffee on its own but, by blending the three together, they lend a face to what a Mexican coffee-profile looks like, or, better still, tastes like. The assumption that “coffee tastes like Coffee” overlooks the careful understanding of the coffee-plant and belittles the effort that is required to make the coffee-beverage. It is true that coffee does have a taste which is distinct from other beverages, yes. However, when Kaffae speaks about coffee, the focus is not the generic coffee taste but, to the contrary, the nuanced flavors present in a cup of coffee, that is to say, Kaffae is voicing the idea that there are coffees that do not just taste like coffee. Kaffae is putting the thought that coffees grown in Mexico taste different from coffees grown in Tanzania, and coffees grown in Sumatra taste different from either, into practice. The idea that the environmental, social and economic conditions had a role to play in producing the nuanced and subtle flavors tasted in a cup of coffee not only piqued our curiosity but outlined Kaffae’s path of exploration: clarify how the different places where coffees are grown make each coffee unique and delicious.

Second, this offering is the launch of K. Localis. The name plays off taxonomic nomenclature, it playfully notes Kaffae as a genus of biological organisms and Localis as a certain species in the genus. However, instead of celebrating the varieties of the species of coffee, K. Localis observes that when one genus is grown in different localities around the globe it - somehow - takes on flavors unique to the conditions it grew within. To be clear, Kaffae chose the word Localis on purpose - its meaning is ‘place’ in Latin. The reason we retrieved this word is to shine a light on an underappreciated aspect of coffee: the unique flavors of a coffee are due to the milieux of ways it changed as its locality changed while the plant was growing. In short, Kaffae’s disposition goes as follows: reactions occurred, flavors were made inside of the plant as the plant responded to the ways changes were changing within the surroundings it is encapsulated by. The unique flavors in a coffee were formed by the plant (en)during a period of time in a definite locality. K. Localis celebrates various coffees by paying a tribute to the role localities play in the formation of coffee's unique flavors.

Third, it is the first time Kaffae and Orkydaceae collaborate. Currently, Orkydaceae is consulting on a project that uses art to display a cosmovision found in southern Mexico. The cosmovision made it possible for the inhabitants to decipher and understand the world they were the occupants of. The project came about when the artist, my friend, Maria Helena, realized that in times of crisis the township of Zipolite had limited access to the resources required to satisfy people's basic needs. After a hurricane hit Zipolite what became clearer was that if the current response to extreme weather events does not change, the current mode of response will not be enough to sustain the local inhabitants of Zipolite. Moreover, what remains uncertain is when and how the extent of the effects of Climate Change will impact the livelihood of the people of Zipolite. For now, Orkydacae is producing an Orkyd that not only contextualizes the discussions of Climate Change and Sustainable Development in Zipolite but articulates a solution to Climate Change that is relevant to local lifestyles. Orkydaceae and Kaffae view the content of their work with a similar regard: just like Orkydaceae understands that sustainability is different for each locality, Kaffae observes that unique flavors are a mirror of the locality where the coffee was grown on Earth. Because of this similarity the two are able to form a symbiotic relationship: Kaffae uses K. Localis for the construction of local-solutions and Orkydaceae understands coffee as a medium for conveying that sustainability is brought about by connecting one with their locality.
